20. Vegan tzatziki

This recipe is a revelation. It actually tastes like real, traditional tzatziki. I have come across a lot of vegan substitutes in my time that do indeed taste nice, but importantly don’t taste similar to what they are replicating (prime example: almost every vegan cheese). This tzatziki is different. It contains absolutely no dairy products, but the combination of soaked cashews with lots of mint, cucumber and lemon juice literally tastes the same as normal tzatziki!

22. Vegan rice noodle

The key thing here is the dressing, it really makes this dish. If you taste it on its own you may think that I’ve really turned up the volume here, but once massaged into oodles of noodles and thinly sliced veggies it loses its pungency and brings the whole dish together nicely.

23. Roasted teriyaki mushroom noodles

This mushroom cooking method could be used with all sorts of cuisines. A Mexican style glaze for mushroom tacos or an Italian style glaze for a mushroom pasta dish would be delicious. I chose to serve the mushrooms over earthy buckwheat soba noodles with broccolini and kale.
