This is so easy to throw together and makes such a comforting meal. Chickpea flour does a pretty good job as an egg replacer but I do find that a few extra flavours help make this extra “eggy”.
Gluten-free pastas can be hit or miss. Generally, there are some really great ones out there but I’ve definitely tried a few that I wouldn’t taste again, even if you paid me too. Thankfully, this Chickpea Spaghetti was on of the best. Especially texture-wise, I feel this spaghetti held together much better than other gluten-free pastas. No sogginess, just that perfect bite and texture. And the fact it’s so healthy is definitely a bonus!
12. Chinese Lemon Chicken
The chicken pieces are lovely in the fragrant lemon sauce. If you have a few extra syns, this would also be great with some cashew thrown in. I didn’t have any on hand today. I like to serve this with either plain steamed rice or if I have some cold rice leftover from the day before I will make my egg fried rice

14. Mushroom Lasagna
It’s creamy, rich, flavourful, comforting and oh so satisfying to eat. The tastiest vegan lasagna I’ve tried so far! Sliced mushrooms are used in place of meat and I use Sacla’s new free-from bechamel sauce to add the creamy element. Vegan cheese or nutritional yeast is totally optional – I’ve tried it both with and without and BOTH are delicious.

If you wanted to thicken your chicken curry up then you can stir in some coconut cream at the end; remember that the sauce will thicken on standing. Serve with Cauliflower Rice or roasted butternut squash and sweet potato for something a little different.
